Makes 4 servings
oil or cooking spray
1 (29 oz) can or 2 (15 oz) cans sweet potatoes/yams in syrup, drained
2 tablespoons butter
1/4 cup milk
1/4 cup brown sugar
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup mini marshmallows, plus 1 cup for topping
Preheat oven to 350 degrees. In a large bowl, mash together yams, butter, milk, brown sugar, salt, cinnamon, nutmeg and 1/2 cup of the marshmallows. Coat a medium baking dish with oil and add yam mixture in an even layer. Top with a layer of the remaining cup of marshmallows. Bake, uncovered, 20 minutes or until lightly browned.
